Heinz Sandwich Spread

Options
I love this stuff but it's quite expensive and the low fat version is never on special so I was wondering if anyone had a recipe that comes close to it. I'm quite an experienced cook but, looking at the list of ingredients, I really don't know where to start:

Cabbage (contains Preservative - Sulphites), Spirit Vinegar, Sugar, Water, Vegetable Oil, Carrots, Gherkins (contain Firming Agent - Calcium Chloride), Modified Cornflour, Salt, Onions, Egg Yolks, Red Peppers, Mustard, Mustard Seeds, Stabilisers - Guar Gum and Xanthan Gum, Spice Extracts, Spices, Herb Extract (contains Celery), Garlic Extract, Colour - Riboflavin VEGETABLES (46%).

I would assume that making the sandwich spread would be like making chutney or pickle. Any ideas?

I have pondered what Sandwich spread actually is before. I came to the conclusion that you could make it from shredded lightly steamed cabbage and carrot then pickled gerkin and pickled onions. All finely disced and then mayo mixed in. A light mayo I imagine and flavoured with celery, mustard, garlic etc

That recipe looks quite interesting and it gives a method of making the spread. I think I'll need to experiment a little with the ingredients but it's a good place to start ;)
