any recipes for pigs liver pate? or other suggestions for pigs liver?

Hi all

well some of the organic berkshire pigs went off to slaughter yesterday and i now have lots of liver...

so i want to make pate - but have never done so before....

i have found a HFW recipe

http://www.guardian.co.uk/lifeandstyle/2008/mar/15/foodanddrink.shopping

but if anyone has any other recipes or any tips that will be great ...

what i can not guess is how much pate one 1.4kg liver will make?

i presume a lot - so if anyone has any other recipes for pigs liver that will be great...

i know it is best to use liver fresh and not freeze it so i need ideas for things i can make and then freeze if possible or else we are going to eat nothing but liver all week..

and the kids have already insisted on having chops for tea tonight they picked them out as soon as the pigs came back..

Have you kept the heart - make faggots :T They freeze really well, and are delicious on a cold winter's day with mash, veg and gravy :)

Hello :) it's quite tricky to find recipes for pork liver pate (I looked when I had some pig livers) so I adapted a chicken liver recipe... basically I chopped a small onion, chopped the liver, chopped some mushrooms and crushed garlic, fried it all in butter. Then I put that into a blender. I then warmed some white wine in that frying pan to get all the nice juices out. Then I popped that in the blender too, along with some cream. I blended til it was smooth, then put it into pots and topped with melted butter. Into the fridge it went until it was set :)

    HTH,
