Fondant covered sponge &iced cookies, how long in advance?

Hi, I want to bake and ice some biscuits (maybe gingerbread or does anyone have any other recommendations? Also want to do a sponge and decorate it (no idea how yet but prob with fondant). I was wondering how long in advance I could make them. Would the cookies freeze with the icing(and silver balls) so I could make them early and how far in advance could I do the cake? Thank you!

Cookies you can freeze, if your cooking from a cookbook usually it says the freezing, storing bits for you. But if your cooking homemade, I look at recipes online/in books and if they're similar the storing tips will be similar to use.New year, new comper here!
