Turkey Breasts

For those not wanting to buy a whole turkey at Christmas, or if you are on a diet and don't want to be too tempted into over-eating what about doing Turkey Saltimbocca. Place 3 sage leaves on each breast and wrap two slices of parma ham around it to envelope the sage. Heat a little butter (or oil) in a frying pan over a high heat, then add the turkey with a few extra sage leaves. Cook for a couple of minutes on one side then flip over (if wanted, at this point add 50g of cooked chestnuts per person, roughly crumbled) and cook for another couple of minutes until cooked through (timing depends on thickness of breast). Remove to heated plate. Pour some (2 tbsp per person) marsala wine and about the same of water to the pan and boil up for a minute or so. Season and then pour over turkey. Serve with veg of your choice.
