cOOKING FOR A DIABETIC

Having tried Sqeaky's advice and searched I have found some threads but none that are of assistance in this instance.
My mum is diabetic (type 2) and has controlled it well for years. She eats really well and occasionally allows herself the odd treat - maybe once a month or so. However she has been to the Drs and come back upset as apparently her blood sugar has gone up. It is her birthday this weekend and I was going to bake one of her favourite dishes - a chocolate roulade. I am trying to locate a half size swiss roll tin (i HATE tescos but needs must!) so there will only be half a cake. I have got the highest cocoa concentrate chocolate I can find and have bought some canderel type stuff instead of sugar. I therefore have two questions:-
1. Apparently with weight I need 10% of the actual amount of sugar substitute - any advice as to any other differences.
2. The filling. I usually use whipped cream and raspberries - would creme fraiche work? Is it better than whipped cream? ditto mascapone?
please help if you can - I hate my mum being upset!
