quick help - how do i cook risotto rice?

Hi all,

I have a box of Arborio risotto rice, but it doesn't say how to cook it. I want to make a vegetable risotto, i have the vegetable stock aswell.

Do i boil the rice before i add it to everything else? Do i boil it in the stock?

  • Boil the rice in the stock. For safety, add everything else at the end.

    As you get more experienced you will learn which things (carrots, celery for example) you can cook with the rice :)

    Boil it in the stock with a knob of butter for richness & stir plenty -it takes longer than most rices too so be warned - Love rissotto
    I THINK is a whole sentence, not a replacement for I Know

    it was so confusing, on the box it said boil for 15 mins and then add to recipes, but i was sure you boiled it in the stock! Thanks.

  • don't boil - simmer ;) i have a recipe for an easy risotto...

    onion
    risotto rice
    chicken stock
    grated cheese

    chop onion and lightly fry in a non-stick frying pan with a little olive oil. while this is cooking make stock and keep warm on a low heat.

    add risotto rice to onions and ensure rice is coated in the oil. add stock a ladle at a time - try to resist the tempation to keep stirring the risotto.

    continue adding the stock and simmering until all the stock is absorbed and rice is cooked - this could take 30 - 40 mins.

    stir in the cheese and serve immediately.

    as a variation i sometimes add cooked mushrooms and/or peas too.

    Hummm I thinking about what I was going to make for supper tonight, think I'll do this. How much cheese should I use? Think we only have medium chedder in.
