A vegan friend was telling me at the weekend that soyflour can be used as a substitute for eggs in baking and the like.
Does anyone here have any tried and tested recipes for muffins, cakes, traybakes etc as I am completing my Ultimate Grocery Challenge (trying to make £100 last as long as possible) and this would really help me stretch the pennies as I have a bag of soy flour.
I use soy flour mixed with sesame seeds and ground up linseeds to make a high protein, high omega porridge mix for breakfast sometimes - but have never used it for baking IYSWIM.

Hello,
I bought a packet of bicarbonate of soda and was interested to read on the back that you can use it as an egg substitute in baking.
Also, I've heard of people using banana to bind foods instead of egg.

Here are what my vegan cookbooks recommend:
Cakes/baking
.Use SR flour, extra oil, bicarb and a drop of vinegar to help the cake rise
.Half a mashed banana replaces one egg
.1 tbsp of ground linseeds (flax), then whisk in 3 tbsp of water
.1 tbsp arrowroot powder (in baking aisle next to bicarb) mixed with 2 tbsp water
.50g silken tofu, blended till smooth
.4 tbsp soya yoghurt to 1 egg
Pancakes
1 tbsp soya flour to replace an egg, or use the linseeds above
HM veggie/bean burgers
1 tbsp of chick pea flour or soya flour to replace 1 egg
1 small grated potato
For bean cakes (like fish cakes), roughly mashed cooked beans with a choice of finely chopped onion, spring onion, spices, grated veg like carrot. Form into patties, dip into a simple chick pea flour & water batter, cover in breadcrumbs and fry till golden.
You can also use this to fry slices of vegetables like butternut squash, celeriac & aubergine. Cut about 1 cm thick. Serve with curry sauce, rice and pickles.... Yum!

I haven't tried it myself but a number of posts in this thread suggest that soya flour work well as a substitute for egg:

My MOT is ony running at £24 of repairs - so with a bit more of Grocery Challenge incl using up some soy flour instead of buying eggs I am loing good for the month ahead
