Great money saving meal recipes that also taste good?

Put a chicken in the slow cooker. I usually stuff mine with quatered lemons. Put herbs, garlic and s&p on the skin and bobs your builder.
My DC3 has the wings, DC1&2 have the legs, DH and I share a breast.
Then the rest of the meat gets divided up. I usually freeze 1 batch and the other will go to make a chicken and veg pie, chicken and veg risotto, chicken and veg fried rice or something like that. Usually using veg that needs to be used up. Any stock in the bottom of the pot is used as chicken stock in any of the above meals. If I have any left over bacon of similar that can be added to any of the dishes to bulk out as well.
I have started freezing the carcasses to make stock at a later date as well.
Then I can defrost the other chicken at a later date and do another meal.
