Can a relative deal with my mortgage for me in my absence?

I have been given the opportunity in my work to go abroad (other side of the world) for a year to work and I'm seriously thinking about it as I won't get another chance.
The problem is that I am due to move into a new build halfway through this period and have not arranged a mortgage yet.
Assuming that I arrange a mortgage OK (there won't be any complications through finance/credit rating worries) how will the payment from me to the builders etc go through if I am not in the country? Is it possible for a family member to deal on my behaf?
Also, does anyone forsee any problems that I haven't thought of?

My son has obtained a mortgage and has remorgaged twice.
He did not himself need to speak to anyone about this other than me.
He signed a letter addressed to a building society which I had written.
It asked them to discuss his original purchase of a flat and arrange a mortgage offer with me. I told them what to offer him etc.
So when they sent him an offer ( which stated that he had not asked for any advice and they had not given him any ) he just need to sign the letter.
I had no problem arranging his first remortgage after 5 years. When I phoned up to arrange a further two year remortgage the first person I spoke to told me he would have to come in and speak to an advisor.
I told them that he would not do that. They told me I could not do it for him. I said I will tell you exactly what he wants ( 2 year: Fixed Rate: Pay arrangement fee up front etc ). You can then send him a letter setting out your offer and requesting him to sign it if that is what he wants.
It stated on the offer that he did not want any advice and that none had been given. He was not out of the country at the time. He was at work...0
