stretching chicken breast

Hi
I have one chicken breast to feed two people for dinner tonight. Last week I used the same thing to make a chicken and vegetable pie which easily fed two, and now I need something different to make it stretch this week.
I also need to use up two parsnips which were dug fresh from the garden on Monday. I have bacon, potatoes, rice, lentils...most of the things people have in their storecupboards...but am lacking ideas, especially on how to use the parsnip too.
I thought I might roast the parsnip (we've recently had it mashed), but does anyone have any ways of oven cooking one chicken breast that would stretch to feed two (including one man with a big appetite!). My creative streak has withered this past week!

Do you have any pasta? I made a chicken and pasta bake last night only using three chicken breasts for six people. You could add the bacon too.
The parsnips will keep for a while or could you use them to make a parsnip soup?

dice it up with the bacon and veg you have and make a stew with it if you have any add some dumplinsi cant slow down i wont be waiting for you i cant stop now because im dancing0

For a treat you could make homemade chicken burgers (half a breast is plenty) & top with cheese and/or pineapple and/or bacon & mayo or tomato sauce, up to you if you want to use bread buns or not, then I would make chips with the parsnip!

Ooh, they all sound really nice. I don't have any jarred sauces, but could do a stirfry and keep the parsnips for soup (never done a parsnip sounp before, but sounds delicious - I have some leftover parmesan aswell which would probably go really nicely). My OH doesn't like risottos which is a pity because I love them, but will have to put that one on hold.
I really like the sound of the pasta bake aswell, I've never made one before so will have a nose around the menu board to find some instructions.

normally when i only have one chicken breast left..( as the pack normaly has 5 )..
i cut up the breast in quite small pieces to make it look more.. and for it to go further...plus cut up the bacon in small peices
fry some garlic...onions...mushrooms..with some mixed herbs.... then add the chicken and bacon cook that..... then add a tin of tomatoes...
boil some rice... or pasta......
and its lovely......its like spag bol.. but with chicken.....
i havent done this but with the parsnips you could ..cut them as thinly as poss.... par boil... and then deep fry them.... but i would blanch the parsnips and freeze them to use in another meal......
i must admit i get in a rut when it comes to food ideas... and normally stick to the same old things.....Work to live= not live to work0 -
What about chicken and veggie kebabs served with rice. if you use enough veggies, one chicken breast will stretch to two people0
