Kedgeree in a steamer ?
Wench
Have just purchased a 2nd hand steamer ( 3 tier counter one with rice basket ) And I want to play with it. Naturally.
My first 'want' is Kedgeree. which is something I've never cooked. but I figure I could do pretty much all of it in a steamer right ? ( not the eggs )
But.. err. How ? Help please

Wash rice and place in steamer basket with twice the volume of water, handful of tender veggies and turmeric/other spices (if you don't mind the basket turning yellow). Leave rice to soak whilst you pierce the end of a couple of eggs with a pin to stop them bursting. Put them in one of the baskets. Switch on and leave - it takes quite a while. When rice is nearly cooked, flake bits of yellow fish into it - be careful, it's incredibly hot - and leave until rice is cooked through.
Stir frozen peas into rice as you get bowls. They'll be fresh and sweet against salty, savoury and soft tastes from the rice.
VERY CAREFULLY, rinse eggs under cold tap and peel them, cut into 4 and chuck in bowls.I could dream to wide extremes, I could do or die: I could yawn and be withdrawn and watch the world go by.Yup you are officially Rock n Roll

Oh, definitely - that's what I upgraded to after wearing out 2 steamers - got a £10 one from the Chinese supermarket.
It's the most used piece of equipment in the kitchen - does perfect potatoes (and by default, the best mash and roasties), all veggies, saves the effort and risk to fingers of trying to peel squashes (cut the in half and chuck them in the basket), does rice, fish, dim sum, gyoza, pasta..........
You can add more ingredients with a rice cooker - or turn it into more of a gumbo/paella/whatever by throwing in Okra and prawns, maybe some fresh chillies sliced finely..........I could dream to wide extremes, I could do or die: I could yawn and be withdrawn and watch the world go by.Yup you are officially Rock n Roll

I've got a value argos electric rice steamer, which i think will do the job properly. If I put the eggs in at the beginning, would they be cooked at the same time as the rice?0

Should think so - but they will be a rather wonderful colour if you've added spices to the rice. Just make sure they're quite well buried in the rice, as I think that makes them cook the most evenly.
Or cook them in the steamer basket, which I usually do when getting spuds ready for potato salad, as everyone here likes hard boiled eggs as well. Oh, and making potato salad with mayo, diced tomato, and chives when they are still warm from the steamer is delicious, as there's none of that sloppiness from boiled spuds.I could dream to wide extremes, I could do or die: I could yawn and be withdrawn and watch the world go by.Yup you are officially Rock n Roll

You could do it in a steamer but why would you? Sounds like a way of making an easy dish hard and messy and not as nice as it should be.:(0
