help recipe needed for daughters cookery lesson

need some help daughter has to do a chinese dish in cooking this week can anyone recommend something easy and quick for her to do

    I saw/read a recipe the other day - stir fry beef - the usual stir fry ingredients but the sauce was peanut butter, soy sauce and juice of a lime.

    I made this at the weekend using chicken, beansprouts etc., and juice of a lemon and it was really, really yummy.

    the tough thing about chinese cookery is that in order for it to be quite authentic - you need quite a lot of fairly random ingredients

    But one thing thats quite easy ( ish) with few ingredients is prawn toasts

    thin sliced white loaf ( tescos do these still as do asdas)
    bag frozen prawns
    chinese all spice
    lardspring onion
    sesame seeds

    Basically you need same amount of lard to prawns ( volume not weight)
    chop lard - very finely chop spring onion and chop prawns very small
    Mix & mash together in a bowl
    spread this foul looking gunk onto a slice of white bread
    then press prawn side down on a plate of sesame seeds so theyve all stuck
    inb frying pan but about 1/2 inch oil - you want it hot but not smoky/spitty
    Fry bread side down first until it goes golden then flip it over.
    Cook for about 5 mins then scoff

    Thats not really a recipe though - its more "what I do" youd be as well to look on a website such as waitrose, bbc or similar.

  • Chicken Chow Mein

    175g egg noodles
    1 tbsp oil
    1 onion, sliced
    2 garlic cloves, crushed
    1cm piece of root ginger, finely chopped
    100g beansprouts
    100g mangetout or peas
    175g cooked chicken
    1tbsp soy sauce
    1 tbsp sweet chilli sauce

    Cook noodles in boiling water. Heat oil in wok or large pan and fry onion for 2-3 mins, add the garlic, ginger, beansprouts and mangetout or peas and stir fry for 2 minutes. Drain noodles and add to wok with chicken and soy sauce, cook for 2 mins, stir in sweet chilli sauce and serve straight away. Serves 2.

    This is one I make quite often:

    Sweet chilli chicken


    Chicken breasts cut into cubes
    1 red pepper
    1 red chilli
    Half a chopped onion
    4 cloves of crushed garlic
    4 chopped spring onions
    Corn flour


    For the sauce:

    Stock cube dissolved in ¾ cup of boiling water
    2 teaspoons of sugar
    2-3 tablespoons of soy sauce
    2 teaspoons of vinegar
    2 tablespoons of ketchup
    a few drops of sesame oil
    freshly ground black pepper

    Make the sauce by putting all the ingredients into a bowl, mix and put to one side.

    Fry the chicken (in batches if making for large quantities) and set aside.

    Fry red pepper, chillies, onion, and garlic over a medium heat for a few minutes.

    Add the sauce ingredients and bring to the boil.

    Use the corn flour mixed in a little water to thicken the sauce if necessary.

    Add the chicken and spring onions and heat through thoroughly.

    Serve with boiled or fried rice, or noodles
