Easy recipes for one hand???

I broke my wrist last week and despite oh being very good, there is a limit to how much prepackaged food I can bear.
Any ideas for easy things to cook? I have various helpful gadgets such a food processor, hand blender, mini-chopper etc.

soups are a good start.
Anything in a slow cooker if he- or machine- does the peeling & chopping, you just need to season and stick in the SC- eg braising steak, veg, stock cube then blend the gravy with some plain flour we had this last night and it was lush.
jacket potatoes? with cottage cheese? Coleslw you can do with a mini processor I bet, or beans & cheese?A variety of things on toast could be done one handed eg beans, bacon sandwich, cheese, egg on toast
Spanish chicken sort of thing, chicken breast baked in passata ( add chillies, veg whatever serve with rice you could do with one hand)

There's a device that I shall now describe very badly:
It's a board with spikes (as if someone had knocked long nails through from the other side, if that makes any sense) which you can fix things to, eg veg so you can deal with them one-handed.
I discovered it as an aid to arthritis sufferers - I guess a specialist chemist might either have one or know where to get one.
I broke my wrist and was not exactly patient - good luck!0
