Yet another noob question from me 
- I'm in the process of writing my 'Here, have a token payment til I find another job' letters, which address do I write to? The normal customer services address as per reverse of statements?

It doesn't really matter to be honest, you're sending it to the company at the end of the day and its up to them to make sure stuff goes via internal mail to the right people!
Eg if you wanted to send something to capital ones debt collection team, sending itto their main address would still get it there as long as inside it said FAO whoeveryouwantMoney money money.
