Talk talk failed to cancel my phone line and demanding money

Hi i am new to all this but i have found a lot of useful info on this site so i thought i'd try my luck again and ask for some advice.
We decided that Talk talk wasn't working for us and we wanted to switch to Virgin so like good citizens we waited until our contract ended. We rang them to say we didn't want to re-new our contract and cancelled the monthly direct debit and asked for our phone line to be cancelled. We were told that was done and dusted and we never worried about it again and we had virgin installed.
We are now on month 9 of having virgin and we have had nothing but hassle from talk talk we've had final demands of bills from after the phone line was cancelled, letters from debt collection companies all demanding money. Everytime my husband rang they said it was sorted and they ignored our demands for written confirmation. After months of phone calls and letter we finally got confirmation (by phone) that the phone line had been disconnected. But we are still landed with the bills and bailiff threats and i am tearing my hair out. Can they demand money for something we never had? we didn't use the phone line since switching to virgin and our contract had ended so i don't understand why we owe money in the first place.
I rang a debt charity and they said to write a formal complaint but i am clueless as to where to start we have no letters from talk talk only the bill demands and no proof of any of the phone calls that took place so how can i complain with no proof to back up my story.
