    If you are wanting the butternut squash for this Sunday it should be fine to roast it and keep it in the fridge. You can roast it with the skin on and it is really nice with some garlic and a thyme and a bit of olive oil. I would put the cloves in whole (skin and all) just crush them with the back of a knife mix it all together and roast slowly till the butternut is soft and slightly caramelised yummy!

    Its also really nice with some roasted beetroot and goats cheese.

    Im in a similar situation in that I live alone and until this year lived entirely on crisps, chocolate and ready meals!! Only difference is Im not so fussed about germs, although I did throw away loads of food.
    Really the freezer is your best friend. I batch cook loads of meals, also cakes (easiest to make loaf cakes then freeze in slices to defrost one at a time). I also do a big batch of mashed potato and add various things to freeze as colcannon, bubble and squeek mash and cheese and onion mash, works out pretty cheap.
    The freezer currently contains various home made soups, meals (like curries, chilli, stew, pasties), veggies, cakes (banana nut muffins, hot cross buns, courgette cake and flapjacks) and today Ive made wholemeal rolls, cheese and onion bagels and garlic naan bread!!I manage to fit all that into 3 drawers and with cookery skills I have only been working on since January!!
    So give it a go and you might surprise yourself!!;)
