Help! Cooling down Madras..

I bought 12 jars of Madras from AF a little while ago & I assumed it wouldn't be nearly as hot as it was! I know, I know - but in the past I have bought similar jars & it wasn't nearly as hot. This stuff is unpalatable! I've added sugar & yoghurt & although they help, it's still very spicy. Does anyone have any tips I could try - I hate to be wasteful & not use them up! X

    You can mix it with a tin of chopped tomatoes, coconut cream (a couple of sachets mixed with a bit of water), or some powdered milk will cool and make it creamy, and cream or yogurt but add it at the end of cooking to avoid it currdling or splitting.
    If you add anything fat based it will cool down a hot curry, this is why a glass of milk or yoghurt drink works.

    I've usually used yogurt in the past, you could try mixing it with a very mild one (i.e. Korma) try one jar and see what happens, maybe?

    you could try putting a raw potato in with it - this is an old way of remedying oversalted potatoes - the theory being that the raw potato will absorb the excess salt, and i dont see why that wouldn't work for excess spice - I havent tried it on too hot curries, usually find that some creamy yoghurt does the trick. let me know if this works hun!

    Sour cream usually does the charm, or you could try half jar of the madras to 2 jars of water and a can of tomatoes x

    My mums curries are way too hot for me and after visiting her I often have a whole load of food to take home so often have this issue x

    A chopped eating apple added to the sauce in the pan works, too, without changing the flavour too much.Or sweet (rather than hot) mango chutney. Spinach. Butternut squash. Honey can help. It's amazing what you can add to a curry to modify the taste!

    Just a thought. Obviously if you hate sweetness in your curry it won't work for you, but do use your imagination!

    You could just use half a jar at a time then add, tomatoes, coconut milk or yoghurt. That way it wouldn't become too liquid and they would last twice as long (freeze the unused half jar for next time).

    Hmm, Brit, we're very greedy by nature - we would love it if it wasn't so hot - we love curries in our house - so if the above suggestions really can't cool it enough I might give them away..but only if I've tried everything! :money:
