Cowgirl food and other recipes

This could obviously be called cowboy food if more appropriate

Cowgirl recipe
Chop an onion, some garlic, courgettes, peppers, broccoli or whatever veg you have. Put in a lasagne type dish, drizzle a small amount of oil and pop in oven (gas 6) for approx 10 mins. Then add pre-cooked meatballs/sausages/whatever you like, a tin of chopped tomatoes, a tin of baked beans and whatever herbs/spices you like. Pop back into oven for another 20mins or so.
If you want to use root veg, such as carrots, then they need to be par-cooked, as they take quite a bit longer to get cooked. The beauty of this dish is that anything goes, so great for when you have just a bit of this n' that left. You can put cheese on top if you like. Serve with mash/boiled/roast potatoes (I don't like chips) or bread.
Easy-peasy potato & leek soup
Peel potatoes and put them on the boil with a chicken or veg stock cube. Boil until the potatoes are nearly done. Chop/slice a leek and add to the boiling potatoes (I add some regular onion as well but it's not essential). Keep it boiling until the potatoes are a bit overcooked. Take off the boil and use a potato masher or "whizzer" to make the soup smooth.
This soup is very healthy as there's no oil, butter, cream or fat in it. You can of course add these if you wish, the same goes for herbs and spices. If using baby potatoes, these of course don't need peeling.
Sweet potato soup
Chop onion and garlic and saut! in a bit of oil. Add spices and herbs at this time (I use Cajun seasoning, all spice, ginger and paprika, but use what you have/like).
Peel and roughly chop sweet potatoes. Add a normal potato as well if you want a "milder" flavour. Add to the onions and garlic. Stir so the potatoes are covered in the mix.
Add chicken or veg stock and let it boil until potatoes are done. Add some drained beans, such as adzuki (tinned) in the last minute or two. Then use the "whizzer" to make it smooth.
This soup is very healthy, as no cream or butter in it, only the tiny bitof oil used to fry the onions. You can of course add cream/butter/milk/creme fraiche if you wish.
I'm sorry there are no measurements or exact cooking times. I'm a "bung it in" kind of girl, and each time I cook something, it tastes slightly different, but just as good
The recipes above are very simple and you can use whatever herbs and spices you like/have. You know how much your family eats, so just go for it with the measurements. All of the above can be frozen and heated another time.
