home made chips, freezing??

Hi
I am trying tonight for the first time making my own fry chips.
I have peeled pots, cut them up and done a first fry for 7 mins, then will fry again in a bit to crisp/brown before eating.
Can I freeze home made chips? Would I need to do the first fry, cool then freeze? Would I have to defrost before cooking or could I cook from frozen.
Advise would be great thanks.

Yep you can freeze homemade chips do you double fry?
Not sure about the fryer I normally do oven ones but this is how I'd do them; do the first fry and then freeze on a tray to cook from frozen pop in the fryer

Yes double fry.Thanks very much, will try freezing next time I make some. The ones tonight were yummy, just didn't crisp up enough.0 -
the first fry should be at about 150 degrees and for about 5 minutes - they should be soft but NOT changed colour! this is the stage where they can be frozen. the second fry should be at 170 degrees for about 4 or 5 minutes depending on how brown you like your chips!
you may not have had the oil quite hot enough for the first fry if it took 7 minutes and then the chips were soggy - you need the oil to seal the potato so that it doesnt penetrate it. but cook the potato. try cutting the chips a little thinner and increasing the heat on the first fry. watch them carefully and lift them out as SOON as they are soft inside. shake off as much oil as you can then increasse the heat to 170 and cook again. they should be perfect in 4 - 5 minutes!0
