    I love lettuce and peas too :)

    Celery is lovely braised, but can go, with onion and carrot into the base of almost everything. Tomatos can be stewed with a little butter and had on toast for a quick meal, and cucumber can be a few things, but I have a recipe somewhere for a cucumber sauce to have with a salmon fish cake or loaf...dh loved it, me not so much, I love cucumber either just as it is or in pimms.

    When I was a little girl, I remember my nana used to chop up salad stuff small - lettuce spring onion and cucumber, then pour vinegar over, and it would be served with the Sunday roast.

    Im not keen on celery either but whenever I get some in my veggie box I freeze it to add to soup/casserole/spag bol etc :)

    I'd echo celery used as an ingredient instead of on its own! I like it on its own, but a lot of people don't.

    Also, if you are feeling extra lazy, you can cook corn on the cob in the microwave: Remove the husks and strandy stuff if there is lots of it. Rinse the corn under the tap, and whilst it is still damp, roll it in a bit of kitchen paper. Pop kitchen paper+corn in the microwave for 1 minute, turn, and then for another minute (or longer depending on how you like it or if its a thick piece). It will be REALLY hot, so carefully unwrap, put a small slither of butter on top and let it stand for a couple of minutes. Easy and yum!

    ooh,am now thinking of geting some salad stuff in the make hot meals-sounds delish, though i love LOSTINRATES advice to just put the cucumber in pimms!! :)

    lettuce and celery are nice in a stir fry! not in the same dish I must add LOL celery and pineapple stirfry with some oyster sauce and chilli and pepper yum :-)

    Would that using a lettuce in a stirfry be a bit dependant on what type of lettuce it is? and what sort of veg did you stirfry it up with?

    I've just bought an enormous lettuce of the rather crispy/crunchy type - so would guess that that (ie rather than "floppy" type lettuce) would be what you mean? - so would be suitable for this one.

    Fill the channel of the celery with garlic and herb cream cheese - this is yummy! You can use plain cream cheese if you want to avoid the garlic.
    Enjoy the little things, for one day you may look back and realize they were the big things.
