Never letting my OH go shopping again!

Why is it that whenever he goes shopping, he buys a load of random things that don't go together?! Not that I don't appreciate the effort, but he seems to spend twice as much as I do and it only lasts half as long :confused:
Anyway, I've managed to put together a few meals and have a couple more planned, but now I'm left with 6 courgettes and no clue what to do with them. I have store-cupboard basics, mushrooms, carrots etc but not much else apart from a jar of black bean sauce - courgettes in black bean sauce anyone? :rotfl:
Any ideas?

    Eat them as veg with your other meals (extra veg won't do anyone any harm!).
    Grate them and stir them into cooked pasta (best if you've got a bit of cheese to grate in a well, some lemon rind, maybe some cream).
    Freeze them.
    Make soup.

    You could make a courgette lasagne.

    Lightly fry an onion in olive oil and add about 3 or 4 diced courgettes and gently fry for a few more minutes, (you could also add mushrooms or perppers if liked) add a 14oz tin of tomatoes, 1 veg stock cube, some mixed herbs. Bring to the boil and simmer for 10 minutes. Once cooled this mixture can be frozen so you can always make a double batch.


    You can either serve this with pasta or make into a lasagne although for the topping instead of a cheese sauce try mixing half a pint of plain yogurt, 1 egg and 1 teaspoon of ground cumin. Bake in the oven for 30 minutes, Gas 5, 190c, 375f.

    I have googled 'courgette recipes' when I have had a glut in the garden and you'd be surprised what can be made with them. Just about everything including cake! Yes really.

    Certainly, chopping very small or grating then swearing with onions before cooking a dish will hide one or two. Mix half and half with mince for spag bol.

    Cut lengthways, put in boiling water for a few mins, drain them and put in a gratin dish. Cover with tom sauce/ cheese sauce and sprinkle breadcrumbs over and bake.

    Sweat slices with onions and garlic and then add tomatoes to make a ratatouille.

    Cut into small cubes and hide some in a veg and bean soup. If anyone says they don't like courgette then just blitz it and don't tell them.

    Hope this gives you a few ideas.

    12oz - 1lb courgettes, finely chopped or thinly sliced
    3 spring onions, finely chopped (or a small leek or an ordinary onion)
    1 clove garlic chopped (optional)
    4 tbsp finely grated parmesan (or finely grated hard cheese,or leave out)
    2 eggs
    2oz brown or white flour
    4fl oz milk or milk and water mixed
    3-4 tbsp olive oil

    Mix first 4 ingredients together. Beat the eggs, flour and milky wter into a thin batter. Add the vegetable mixture and mix well. Grease a large, shallow ovenproof dish with 2 tbsp oil, tipping it round to cover the base evenly. Pour in the batter - it should be no more that 3/4" deep - and smooth out the top. If there is too much mixture, use 2 smaller dishes. Drizzle over the rest of the oil and bake in a very hot oven 200C/400F/Gas 6 for 30-35 minutes. until the pie is set, golden brown and risen slightly. Cool a little before serving. Any leftovers can be eaten cold.
