I make an Algerian bread ( or a few different types) for dh and the rest of us. It is made with semolina flour and I want to make it a bit more healthy by adding some bran, but I can't find any anywhere. I have looked in the baking aisles and cereal aisles of the big supermarkets, but no joy.
I have tried using a bit of wholemeal flour in the mix, but it changes the texture too much.
I remember my Mum used to always have a bag of bran which she would sprinkle on her cereal every day for extra fibre.
If I can't find any, do you think it would do the job to buy some All Bran and whizz it up?

Have you tried Holland and Barrett or Julian Graves? Alternatively give it a quick google to see if you can buy it online. I would but my computer is running v slow0

Thanks Jools. I haven't tried H&B. I won't get a chance to get into town for maybe another week. Haven't heard of Julian Graves. Mustn't be around here.
I will Google it. Thanks for the suggestion.Father Ted: Now concentrate this time, Dougal. These

Bless you Bitsy. That's perfect. Now that I have looked at what they have, I'm trying to remember if it is wheatgerm, or wheat bran that my mum used to used that had quite a nice taste. I know one of them has a nice flavour and the other was tasteless.
Anyone know which is the most healthy?Father Ted: Now concentrate this time, Dougal. These

I find bran dry & tasteless, but the fibre in it's good for you
wheat germ has a sweet nutty flavour & is good for you nutritionally, it needs refrigerating though or it'll go rancid
so both good, but for different reasons
if you've no Julian Graves or Holland & Barrett near you, any health food/whole food shop should sell both items0 -
Thanks Swan. So it's wheatgerm I'm after then. Wonder if it would freeze? I wouldn't have thought of that going off, but I suppose it would have a certain amount of natural oil. I'm sure it probably would freeze ok. I would only be using a wee bit every so often, so wouldn't want to waste it.Father Ted: Now concentrate this time, Dougal. These

Hi Rosie 383
I bought a 500g bag of wheatgerm bran at Morrisons last week. I think it was close to the bread flour.I am playing all of the right notes just not necessarily in the right order.

& you're right, it's the oils that go off, it'll still be edible & won't do any harm but won't taste very nice
yes you can freeze it, it should stay reasonably free-flowing so you can just take out what you need
I like the sound of your Algerian bread (I've been meaning to try a Moroccan semolina bread after seeing some on telly) are you willing to share your recipe?0 -
Mrs Veg Plot, unfortunately we don't have a Morrison's anywhere near us.
I will post the recipe for Algerian Khobs Dar if you want. Depends what you are after. The khobs dar is a nice round light, crispy on the outside, fluffy on the inside type loaf, and kisra is the more everyday, flat, quite firm and crispy one.Father Ted: Now concentrate this time, Dougal. These
