Do you use 50/50 parsnips to apples or say 65/35??
Also do you use 50/50 stock to milk??
Think I'll try this - thanks.
Lynsey
I tend to use
1 medium onion
2 medium parsnips
1 large bramley apple
1 pt stock
1 pt milk
S&P to taste
Fry the onion, then add chopped parsnips and apple, usually add some mixed herbs, add stock, bring to boil and simmer until cooked, about 15/20 mins (depends on how small you chop parsnips and apple.
I then add the milk at the end and blend to a smooth soup.
I have also added some grated parmesan to the mix, but actually now prefer to just add some to the bowl of soup rather than mix it all in. Think you get more of the cheesy taste that way but the cheese is optional.0 -
Many thanks, I was thinking of 1pt stock and 1pt milk.
I also like to add the parmesan after.
Might also try this with pears instead of apples as I got some cheapies (reduced) from Sainsburys last night (big bag for only 39p).
Thanks again for the recipe - very much appreciated.

Treseme Naturals was half price on Thursday (£2.50 for a huge bottle), the non natural ones were a bit cheaper. Also, didn't appear to be an offer but 4 free range eggs were 30p (little boxes of 4) so got loads of them. Oh, and fresh potato wedges were reduced to 50p (the chilled ones in bags), got some Spooners (or similar) icecream reduced from £3+ to 99p and organic salad potatoes were reduce. Loads of bargains to be had at the moment!
