Peppers carrots swede sprouts - can anyone think of owt to cook with these??? :-D

My OH bought all of these veggies coz they were cheap so they need using up - anyone got any good ideas please? :)

    carrots, swedes and sprouts I'd bung in any old casserole, peppers can be used for anything veggie fajitas, on ordinary sandwiches (or maybe that's just me)

    I like baked peppers with savoury rice and some cheese, good dinner there.
    The frontier is never somewhere else. And no stockades can keep the midnight out.

    Roast them! Put the peppers in later, though. You can use the roasted veggies for soup or as a pie filling or just eat them as is. I like to add paprika to them as they roast but they'll be nice whatever you do!

  • You could freeze them if you can't use them up in time but fajitas for the peppers. Sprouts personally I would freeze and use with roasts as and when needed!

    Carrot and swede, soup or a root mash?!

    I've been Money Tipped!
    The brussels I'd light ly steam then saute with onion or srping onion and bacon, perhaps a little white wine, serve with a meat...probably chicken or pork, and the carrot and swede mash.

    Personally I'd stuff the peppers, either with a bolognese style ragu or with lamb mince, rice, some dried apricots, cinnamon and or ras el hanout style spice and some mint and serve with green salad and FEEL summer coming!

    How about adding some mashed potatoes to the carrot and swede mash and add the brussell sprouts too for a sort of bubble and squeek?

    Serve with the stuffed peppers already suggested ;)

    Or cut peppers up and have them as a snack
