    hello! my first post, had to reply to this!

    My mum makes the best veggie xmas thingie ever. Sage and onion stuffing wrapped in sosmix (with onions and a tiny bit of marmite) all wrapped in puff pastry, cut into slices. We call it the brick, it looks like one and it's pretty dense but sooo yummy.
  • I am having a butternut squash roast frozen from Sainsburys. As a veggie I dont eat fish. Not keen on nuts in cooked food, not a great lover of quorn TVP etc is fine oh and I have never used lentils either lol how awkward am I. If I was going to someones for Xmas dinner I would be happy with a Linda McCartney Pie!!

  • I sometimes make Camembert and cranberry filo parcels for Christmas lunch - they're dead easy to make (even after a couple of glasses of champagne!) The recipe serves 4.

    1 x packet filo pastry (6 sheets)
    115g (4oz) butter, melted
    1 x 250 camembert, cut into quarters
    4 x tblsp cranberry sauce
    sesame seeds for sprinkling

    1 Preheat oven to 200°C. Take filo pastry sheets one at a time and brush with butter then fold in half. Brust again with butter, then place a wedge of the camembert in the centre. Top the cheese with a tablespoon of cranberry sauce.

    2 Carefully wrap each wedge of cheese in the filo pastry sheet until it is well sealed.

    3 Cut the remaining two sheets of filo into strips, brush with butter, scrunch them up gently and place on top of each parcel.

    4 Brush the parcels with melted butter and sprinkle the sesame seeds on top.
    Place on a greased baking sheet and bake for 10-15 minutes until golden.
    It's better to beg forgiveness than ask permission.

    I am veggie and will be having a mushroom and nut roast for Christmas lunch. I will be cooking turkey for OH and his family though (he doesn't know how lucky he is to have a veggie that will cook his meat for him :D:D )

    In previous years I have had mushrooms wrapped in filo pastry and veggie lasagne. The recipe above from Miss Behaving sounds very yummy. To be honest though, I am usually quite happy with just the trimmings - there are usually so many vegetables and roasties on offer that I don't go hungry. One thing to remember is the gravy though - veggies still like gravy but not made from the meat obviously.

    However, they do eat lots of other things. The veg soc has 2 complete menus this year - one for saints and one for sinners. http://www.vegsoc.org/christmas/

    As someone else said earlier, I would also recommend Rose Elliot's Vegetarian Christmas. It has lots of innovative suggestions.

    Right first point if she eats fish or anyone eats fish and does not eat anyother meat they are not vegitarian.

    As for alternatives m&s do a mushroom nut roast in the freezer dept, sainsburys has some interesting alternatives too ........I have veggie partner and a vegan daughter so xmas is always "fun" trying to find something a little special to make or buy for xmas day.

    I've been Money Tipped!
    Sainsburys have got a delicious lentil moussaka in their 'not just for vegetarians' range ... failing that, mushroom stroganoff is quick, easy and delicious ... I have been making it for so many years that I can give a recipe but not with any quanitities ...
