    I know what you mean... I had to build up to eat spicy food for my OH. I can deal with medium Piri piri now:-)

    No, it is the other way round with my OH - he doesn't like cooked petit pois for some reason. Mashed from chippy and fresh from garden he eats. But will eat cooked hidden in a soup:-) Just worried when he actually sees them (ie green peas is very visible on white risotto) he will not be happy.

    Both OH and I don't care for broad beans either:-)

    I usually go for mushrooms and/or courgettes. I also sometimes use sweetcorn or peppers.

    If it's got to be green, but can't be peas or sweet pepper, what about some chopped French or runner beans?

    PS. I've just had a brainwave. Those main ingredients are very Mediterranean. (I like the idea of the octopus: at least everyone gets a leg. :) Actually, they have 4 pairs of arms. And 3 hearts.) Anyway, what about some pitted green olives, maybe cut in half?

    No beans in our house allowed appart from baked beans:D It doesn't have to be green, just something appart from white rice and the actual seafood.

    Courgette sounds great too. Also putting on my list of possibles. Will see what they have in Tescos.

    I always put courgette in my HM Seafood Paella as DH is not keen on peas and doesn't like beans either - would recommend it.

    What about some smoked salmon draped over when finished cooking?? - The guy cooking on this morning today did that with his seafood chowder and it looked really good!

    I love salmon and would definitely do that if I was doing plain-er risotto, but I have massive expensive king prawns (that will already be pink once cooked) and hoping to buy some octopus/mussles so it will be expensive meal enough!

    Just wanted some kind of veg for the finishing little touch..

    Thank you all. Thinking about it this much makes me want it now!:D

    I always add sweetcorn, finely diced peppers in as many colours as I have in the fridge, just a few peas, mushrooms maybe some fresh diced tomato... & use saffron to colour the rice but you could use turmeric or even some smoked paprika.....
    I THINK is a whole sentence, not a replacement for I Know

    If you just want to add a nice green colour then why not just a handful of roughly chopped parsley? or dill? both go beautifully with seafood! add right at the end of cooking so you dont lose flavour or that lovely fresh taste.
