Seafood risotto

HI guys,
We are having seafood risotto tonight.
What kind of veg would you put in it? What goes with prawns and octopus and possibly mussles? ( I haven't been shopping yet).
I found nice recipe from Hairy bikers where they put peas in it, I imagine it adds nice colour to it (otherwise it will look very plain), but my OH doesn't eat peas!!

Red pepper sounds good, however I would have to roast it and skin it first as my OH will get indigestion otherwise..
Maybe changing an OH would be easier:-) He is not as fussy as it sounds, I promise:-) He actually loves red roasted peppers.. it's just that they are expensive and lot of work!:-)

Probably as many as possible from this list: onions, garlic, celery, carrot, peppers, mushrooms. Might have to put this down on the menu for next week!

Garlic, celery and onions are already in the base..?! I need something to give it a colour.
Could put in chestnut mushrooms with the red pepper in.. beginning to look more colourfull now:-)

Just as a wee tip, Lidl do large jars of roasted peppers, I think they are £1.19 or thereabouts, and much cheaper than buying and roasting your own, there's usually about six in the jar.It's what is inside your head that matters in life - not what's outside your windowEvery worthwhile accomplishment, big or little, has its stages of drudgery and triumph; a beginning, a struggle and a victory. - Ghandi0

They must be preserved somehow? Sometimes the preservatives alter the taste of the veg being preserved.. I'll have a look - if it is just in oil it shouldn't alter.. Surely they will have them at Tesco as well? Lidl nowhere near me..
Even at £1.50 - £2 they would be much cheaper then getting your own if there is 6 in the jar!

The Lidl ones are in water/salt.sugar mix I think, they rinse off ok though and still smell and taste pepper-y. I don't know if Tesco do a budget range of them, but they will definitely have them in the antipasti section. I've its just colour I'd put some thing fresh in at the end..parsley perhaps. I put in celery, (peas;)) onion, leeks
I tend to think the colour comes from the fish in a seafood risotto....I have no problem serving them plain looking, like Milanese risotto....but studded with seafood is lovely too.
It depends of course, how adventurous you are. I found a stash of squid ink in ou store the other day...we're going to be having LOTS of black seafood pasta, pasta sauces and risotti soon!0 -
Cannot find any roasted pepper, unless stuffed at Tesco (looking online). Sainsburys have them, they are Greek and cost nearly £3!!! Might just go with value peppers from Tesco (if they have any in) and do the hard work this time.
Fresh celery.. yuk. Sorry, not making it easier, am I? Between me and OH we don't have many choices haha!!

I think pepper and mushroom it is. Thank you all. failing all that I put the peas in and OH can pick it out if he wants:-)) I don't really trust is hatred of peas anyway, he eats it fresh from my garden and mashed from chippy!!0 -
Is it all peas? My family dont care for them at all although I love them for colour and goodness. I have had success using petit pois or gardens peas, they both have a sweeter taste than straightforward vining peas. Even I can't stomache marrowfat peas or processed peas - but I have found that over time I can acclimatise my palate to most things by starting off with a little and working up. Only Advocadoes and Broad beans have been total losses on the eat it till you get to like it stakes.0
