Hi,
I am making a birthday cake for my sisters boy friend who is mad about anything cinnamon. I have had a look for a recipe but can't find anything that sticks out. Does anyone have a tried and tested cinnamon cake or cake which is cinnamony with other ingredients. Any suggestions as always would be great

This is the only one I have made many times. I make the lemon version as we all love it, but it originally is a cinnamon teacake.
Just thought I would share this easy recipe. I make this at least 2 or 3 times a week when I am in Algeria as it is everyones' favourite and only takes minutes to prepare.
60g marg or butter
1/2 cup sugar
1 egg
1 cup SR flour
1/3 cup milk
1 lemon /cinnamon
Preheat oven to 180/ gas mark 4.
Grease a 20cm tin. (In Dz I use about a 30cm tin and double the ingredients as there are a lot of us). If you want to turn it out of the tin, grease and line base.
(I tend to just leave it in the tin and take the slices out as needed with a spatula.)
Beat marg and sugar together then beat in the eggs.
Add the flour and milk and beat until smooth.
Add zest of the lemon and put in prepared tin.
Bake for 20 mins, (even if using bigger tin) and take out as soon as it springs back to the touch and is just shrinking from sides of tin. Should just be light golden in colour.
Brush all over with juice of 1 lemon and sprinkle with a little sugar.
Options: Cinnamon cake. Omit lemon and brush with melted butter, sprinkle a little cinnamon mixed with sugar. 1 tbsp sugar - 1/2 tsp cinnamonFather Ted: Now concentrate this time, Dougal. These
(he points to some plastic cows on the table) are very small; those (pointing at some cows out of the window) are far away...
