Hello
I want to try making basic cupcakes. I am trying to find a recipe which will do just 6 (or I will pig out on them all and be ill) and is very simple. All the recipes I find are for 12 or 24.
Could anyone help me please?
I have been considering one of the Lakeland cupcake makers and I know they have a recipe for 6 but I can't really afford a dedicated cupcake maker.
Also a very basic buttercream topping which can be swirled onto them, mainly to hide the fact that anyhting I make usually peaks on the top.. I keep finding complicated meringue type buttercream toppings and I will be out of my depth.

Can't you just halve the quantities for a recipe for 12?
Buttercream is easiest if you just do twice as much icing sugar as butter, say 4oz butter + 8oz icing sugar, add a drop of milk too and food colouring if desired. Or cocoa powder to make it chocolatey.0 -
You could just freeze the extras ones and then have them available for emergencies....
Best part of cupcakes is licking the bowl afterwards though.0 -
I just recently discovered this tip for making fairy cakes (aka cupcakes):
weigh your egg/s in the shell and then whatever the egg/s weigh is the same weight that you need of butter, sugar and flour.
This makes it much easier to do small amounts because if you use a medium or small egg that only weighs, e.g. 40g then you use less of everything else = less cakes! But this way the proportions are still correct and I found that 1 medium egg is enough for 6 or 7 cakes.
It is difficult to halve recipes that use 3 eggs but I've found the above method foolproof!
