Rubber beef!

Husband did the shopping last week & returned with a big piece of beef - £9.68. Only 2 of us but I appplied the stretching mentality that I usually apply to chicken & was pleased with the results. It did 2 portions of roast dinner, 2 portions of sliced beef in gravy, 2 portions of beef curry, 2 of beef stir-fry with green pepper & black bean sauce, 4 portions of cottage pie, 1 beef sandwich with horseradish & 2 beef & salad rolls. That worked out at 15 helpings, 64p worth of meat per portion & lots of nice extra things in the freezer for the rest of the month. As the curry sauce recipe made plenty, I froze 2 additional containers of that too. if I'd done the shopping, I wouldn't have chosen that piece of beef as I'd have gone for something cheaper, but I can't argue with all the meals/packed lunches it made. Old-style can be very satisfying, can't it?

i find beef alot easier to stretch than most things, saying that i still only buy roasts when there in offer or reduced

How do you make your beef in black bean sauce? And do you just whizz the beef in a food processor for cottage pie? I too have got a maasive bit of beef leftover from yest so I'm looking for some ideas I can cook up today providing me with a fairly chilled week. I love this site, I've already made some pizzas and frozen them alongside friday nights dinner. This site rocks!0
