Butter Icing (made too much)

I've just made a cake (my dd's request for her dad's birthday today, i get to make it, she gets to 'decorate' it when she gets in from school :rotfl:) anyway, i've made too much butter icing.
Can i keep the icing til tomorrow or have i got to bin it?
Loathe to throw it away unless i really have to.
I dont have any more time to make extra cakes before hubby comes home as he's finishing earlish :eek: and we will have a house full soon.

If it keeps, where's best to keep it, fridge or cupboard.
Its already in an airtight container.

    It'll keep for ages in the fridge - for just as long as the butter would last :)

  • As long as it is just butter, or margarine, and icing sugar, you can keep it covered in the fridge for as long as you would keep butter.
    You can also freeze it for a couple of weeks.

    It has a tiny drop of water and vanilla flavouring, does that make a difference LOL

    In that case it'll last for ages (its stable at room temp too, so you don't have to put it in the fridge unless your house is very hot). If you freeze it, you can keep it pretty much forever. I make big batches and do this as I find it dull....

  • I always make too much and keep some, as long as it doesn't have eggs or cream in it, it'll stay for a long time. If you put it in the fridge, just beat it for a while to soften it :)

    Please to say the cake went down a treat!
    DD(8) decorated it with blue icing and arranged haribo's on the top to make his age LOL

    And the spare butter icing is sitting safely in the fridge.....................

    Hi,

    Just to add that I've sucessfully frozen frangipani mix as well. This mix has eggs in it. The reason is the same, had too much mix left over after filling one tart tray.

    It was frozen for about a month I'd say, but I'm sure it would have been fine for much longer.

    We are about half way through the second batch made with the defrosted mixture :D and still alive and very much kicking :D

    I've since frozen the made cakes as well as we don't eat many and they would go stale before we ate them. Ideal for OH's lunch box :D
