How about carrots with a little honey and sesame seeds. Put the carrots in tin foil, drizzle with a little honey and sprinkle with the seeds, fold up the foil into a parcel and pop in the oven for about 30 - 40 mins.
Also, shreaded cabbage and thinly sliced leeks, fried in butter is lovely!!!0 -

Thank you catowen both ideas sound gorg and are now on the menu:T0 -
Chilli roast potatoes are gorgeous. All you need to do is the usual for your roast spuds - par-boil, drain, shake 'em up in the pan with the lid on, then tip into a roasting tin of hot oil. Spoon the oil over the spuds, then grind some crushed chillies over them before you put them in the oven. You can try this with various types of grinders, if you don't fancy crushed chillies; there's enough of them available! Try places like Farmfoods and the food section of your local pound store. I managed to buy a whole load of grinders for various flavours, for a quid eachI was cut out to be rich, but got sewn up wrong.0

Thanks for all your help - dinner was a great success:j
Final menu :
Individual Beef Wellingtons
Forestiere potatos
Roasted parsnips
Mash pots (for the hubby!)
Carrots with honey and sesame seeds
Cabbage and leek (threw in some sprouts and cashews as well lovely!)
Yorkys
port gravy
followed by apple and blackberry crumble and cream
coffee and ports
lots of work for the trusty dishwasher now but it all went fab and thanks loads for your suggestions:j :A :A0 -
