Hi westlothian
Try getting yourself a slowcooker (can pick them up for under a tenner). My other half couldn't boil an egg but can now produce a pretty good meal thanks to the 'chuck it all in, turn on and go to work' approach! They are great for stews and joints of meat (only need a small amout of liquid in them - don't feel obliged to cover everything) and can cook the potatoes/ some veg at the same time, chilli also works well. A gammon joint cooked with honey and brown sugar is a winner in our house. Two minutes to throw in before work.
Means you can get away with cheaper cuts of meat, don't have to mess about when you get home after a hard day and decide can't be bothered for one. Then use the leftovers for work lunches.
Also, have you tried shopping at Lidl or Aldi? Most of their stuff is great and they have the added bonus of not selling CDs or DVDs so will avoid temptation! Plus you can fly round and be out in 10 minutes.
Good luck
