Does anyone know how to make a nice Indian massala chai or a kashmiri masasala chai please?
I love Indian tea but I have no idea how to make it.

When we were at DH's cousin's house in Chennai, Mary (pronounced Mar-EEEEEEEEEE) the maid made wonderful chai by boiling up milk and just sprinkling spices and sugar over the top. She wouldn't tell us what was in it though as it was her secret. And for me she made "normal" tea in a teapot as I was English...

The masala, or spice mix usually has ground cinamon, ground cardamom seeds and ground peppercorns.Hoping this year is better than the last.

There are some really good chai tea bag blends around (vanilla, green, spiced, plain etc ~£2 for 20 bags) but a very easy recipe i use for 4 cups is:
2 darjeeling/black tea bags
1/4 tsp each of ground mixed spice, cinnamon, ginger, cloves, cadamom
tsp honey
few drops vanilla essence
i don't use milk in tea, but i'd imagine you'd want to almost double the spices if using milk and experiment with the quantities! if you have time to simmer whole cloves, ginger and cinnamon sticks it's even better
