I'm planning on doing my cake myself too - question for those having sponge and making it themselves: how far in advance are you going to make the sponge cake?? As fruit can be prepared well in advance, but I'm worried about the sponge going dry. However, don't want to be panicking and making a cake the day before the wedding0

I'm making my own cake (I have my own business selling cakes/cupcakes so it makes sense!) but I don't know what design or how many tiers yet.
I think if you're on a very tight budget, M&S cakes are the way to go.
Even as a cake maker I find some of the prices companies charge absolutely ridiculous.:heart: Think happy & you'll be happy :heart:

I would make the sponge a 2 - 3 days in advance but no more than that. You could freeze the sponges, but personally I think it ruins them a bit doing that.:heart: Think happy & you'll be happy :heart:

I'm not sure why though as I am shocked at the price of cakes!!
I've never tried sponge cake, I think its better received by more people than fruit cake but I LOVE Christmas cake (one of the best things about Christmas for me!)
Do you have any pointers for a sponge cake recipe? I am thinking I could do two tiers maybe (getting ambitious now!!)

I did this about 10 years ago for some good friends having a wedding on a budget - the cake was our gift to them. I bought three Tesco fruit cakes of different sizes, and bought pillars, silver decorations and some glucose syrup to stick them on with. It looked lovely, cut beautifully, and nobody said "Oh it tastes cheap":heartpuls Mrs Marleyboy :heartpuls

Does anyone know if any of the supermarkets do fresh cream cakes? Not a wedding, I am looking to buy one for my daughter's birthday party and have my heart set on a fresh cream, really moist cake (that's what I always had as a child). I dont really like buttercream or marzipan icing which seem most popular, though they are easier to decorate. Bakeries have quoted me ridiculous prices for fresh cream cake. Not much of a baker myself am afraid, would be grateful for any ideas where I can buy for less.0

I'm doing my daughter's cake - she's asked for 3 tiers plus a cup cake with a very simple design (thank goodness) it will just be fondant ready made ivory icing, with ribbons and silk flowers to decorate, so doesn't require a huge amount of icing skill (though I do the Christmas cake and last year did my parents' Golden Wedding cake). The difficulty is what she wants them made of! Bottom tier - Madeira, middle tier boiled fruit with marzipan etc, top tier chocolate sponge - all ok so far, but one of her best friends is allergic to dairy, so she wants a vegan cupcake just for her, because she always misses out on wedding cake - does anyone have any vegan cake recipes? (Must be nut free also!)0

I wouldn't recommend using a victoria sponge recipe....it doesn't keep as long! The professional cake makers make either a madeira cake or a genoese. They slice better too as they are slighly more dense so won't collapse and can take the weight of the icing better.0
