Afternoon all,
I have a Cookworks signature breadmaker (the stainless one) and recently bought a bulk quantity of McDougalls Bread and Roll mix from one of the online discount companies (Big Brands for Less).
I tried a wholemeal loaf the other night, roughly following the directions on the packet, however the loaf rose far too much and ended up hitting the lid of the breadmaker.
The bags of mix are apparently good for 13 1lb loaves each, however my BM has settings for 1.5lb or 2lb loaves - so I just doubled the quantity given for 1lb loaves.
1lb loaf
11 fl oz water
1lb dry mix
What quantities would you suggest I use when trying again?

I have a MR Breadmaker, but had exactly the same problem. I used a full small pack of Breadmix, as the contents listed on the pack confused me with the loaf size for my breadmaker.
When I used the mix again I weighed out 2/3rds of it, i.e. 360gms and 2/3rds of the liquid (1 & 1/8th cups which is 9 fluid ounces)). I then baked it on the large loaf setting (in my BM that is 1.5 lbs) and it was perfect.
I would assume that for your machine the quantities would be similar.
The other option is to use the larger quantity, mix it on the dough setting and then bake it in the oven. You could then decide whether to make 1 large loaf, 2 small or rolls and bread.
