Buffet ideas-for someone with dodgy knees!

Hi everyone!
It's my daughters 18th next Friday and she's having a big party (70-80 people). To save money I decided to do the buffet! I thought this would be great but it's becoming quite stressful due to the fact I cannot stand for too long due to severe knee problems.
I have quite a lot planned already but wondered if anyone has any 'foolproof' finger buffet ideas?
I'm already doing a selection of sandwiches, sausage rolls, pizzas, garlic bread, corned beef pies, cheese straws and quiches (all homemade) for the savoury side. I'm doing cupcakes, biscuits, cookies etc for the sweet side.
My main problem is that I have to do it all spread thoughout the week so I don't knacker my knees. Only thing is lots of 'stuff' tastes better made on the day so I'm also experimenting with freezing some things.
Any ideas/suggestions. The easier/quicker/impressive the better!!
I know you will have something much more exciting than my rather boring suggestions!

i run a buffet service, and love doing the cake side of things, i freeze a lot of mycakes and take them out when we need them
scones (obviously do not cream and jam them until they are defrosted)
banana cake
fruit cake
flapjack
lemon drizzle
lemon fairy cakes and butter icing
choc and orange cake
cookies
shortbread
mini muffins
just off the top of my head. i cut these all into bite size fingers and arrange on platters
some of the hot food is indian bites, cheese and onion goujons, crab cakes etc etc

You could do some savoury tartlets like quiche. The sort of thing on the jus roll advert where you take a sheet of puff pastry and layer with sliced tomatoes and mozzarella? You could either do individual ones or a big one.
I've done a microwave jambalaya recipe as well before which is delicious hot or cold.
Take a large pyrex bowl and tip a tin of chopped tomatoes in it, fill the empty tin with easy cook rice and tip that in, fill the tin with cold water and tip that in, empty a tin of sweetcorn in, chop some chorizo and put that in, chop a red pepper and put that in and add some cajun seasoning. cover with clingfilm and pierce the film. Microwave on high for 15 minutes. remove film and stir and microwave on high uncovered for a further 10 minutes.
This makes a nice sort of rice salad if eaten cold.
You could also make some dips to have with breadsticks etc.0 -
Homemade potato salad and coleslaw is also a fave of mine! Also roasted vegetable couscous is delicious. Have a look on BBC Good Food and if you put "buffet" in the recipe search it brings up lost of lovely things.0

I'm bread baking today to make bases for pizza and garlic bread, par baking then freezing.

we saw Jamie make these and my daughter begged me to make them. may have been easier for us as we saw him do it but was so easy and took about 10 mins to make before putting them in the oven. we didnt use fennel seeds as we couldnt find any but agreed needs a little something like spreading mustard on the sausages. they we lovely! best we've ever had0
