how to cook pork ribeye roast?

Hi

Bought a Pork Ribeye joint yesterday - was reduced from the meat counter, so no cooking instructions.
I want to roast it for lunch. Assumed it was a quick roast, and looks pretty lean, but that makes me worry I'll dry it out (as usual with pork!!)...

    never heard of pork rib eye - I'm imagining its like a loin? does it have the rib bones on?

    Hi,

    No I hadn't heard of it before either, but it looks like a loin, so I am now as we speak cooking it as such!!! It is boneless.

    Will let you know how it pans out...

    Well I can highly recommend Ribeye!! It was lovely a tender and moist, and I cooked it like I would a Loin.
