75% fat is close to the fat level of butter and the same as the blocks of Stork, so I wouldn't have any problem using it in place of butter. Here were my first thoughts given your other ingredients. I don't have any recipes to hand, but I'm sure some could be dug up in the recipe index...
Victoria sponge
Chocolate chip cookies or muffins
Chocolate cake (I'd give you my recipe, but it uses bicarb not baking powder)
Cheese scones
Jam tarts (as you suggested)0 -
As you've only got two eggs, biscuits are probably your best bet. Or shortbread... Sugar, flour, fat0

Maybe there is a bread recipe you could make using the flours, eggs, and baking powder with the vegetable fat?
Once made, on it, the cheese or jam could be used for sandwiches.0 -
make some pastry, roll it out into a rectangle ... dust with Cocoa powder & sugar, then roll each side into the middle making two rolls joined IYSWIM, chill in fridge for 20 mins or so then cut into slices & bake ..I THINK is a whole sentence, not a replacement for I KnowSupermarket Rebel No 19:T0
