  • The thing that always goes down well at my dinner parties are:

    jamie olivers; chocolate pots
    my own; savoury tarts ie tomato or red onion made with puff pastry with salad ,tangine and cous cous,Tortilla.

    Gingham ribbon had some lovely vegetarian recipes on her meal planner. The 3 bean chilli is really nice and I would imagine it's quite low fat. I don't know how to do links to it, but I'm sure someone clever will be able to help if you fancy it.

  • Here's the veggie menu planner. Glad people are still finding it useful.

    And here's the 3 bean chilli. It's a favourite in our house and the fresh coriander really finishes it off nicely.

    Think I will do stuffed peppers. We were at other friend's for dinner on Sat and they did stuffed peppers and they were yummy. with couscous. qwuite cheap and whats not to like ?

    Will do baked peaches for dessert, I posted that on John's dinner party thread.

    Still undecided as to starter. Maybe soup with homemade bread.

    Will post back after the weekend and let you all know what I did in the end.

    So the final menu is:
    Starter: homemade butternut and carrot soup (bit experimental ...)
    with homemade bread

    Main: stuffed peppers with couscous and pinenuts, and salad

    Dessert: sweet mince and apple filo strudels (recipe from my WW handot this week)

    Yum!

    it all went down a treat.
    The soup was AMAZING. Hubby said its the best soup he's ever had, he said it was better than Covent Garden stuff you buy :o which is unlike him.
    Recipe was this:
    chop an onion,a small butternut squash and 3 carrots and fry in spary oil til softened a bit.
    Pour in about a pint of stock, a quarter teaspoon nutmeg, a quarter teapoon ground black pepper and leave to simmer very gently for about 45 minutes. Whizz up with blender.
    I then left it to cool and when we ready to heat I warmed it through and stirred in about 2 fl oz milk. It was fab. Served with HM bread, still warm as I timed it to be ready jst before we ate.

    Stuffed peppers good too, served with salad and couscous with pinenuts ad topped with feta cheese

    The pudding recipe was something like this:
    peel core and chop a couple of apples
    mix in with a small jar of sweet mincemeat
    lay out a sheet of filo pastry and dollop a line of apple/mince along the end
    Roll up like a swiss roll and chop into 3 mittle sausages.
    Repeat for as many as you need
    Bake at 150 oC for about 20 minutes or til they loko cripsy and golden.
    Oh I think yu were supposed to spray the filo before rolling it up
    Served with creme fraiche (the remainder of which was used n pasta sauce on Monday)

    And then a cup of tea :D
