Cheap low-fat veggie dinner party

In a similar vein to whosever the other thread was, I am having a dinner party on Saturday. There are 6 of us, hubs and I are veggie so we cook veggie for all. we eat dairy and eggs but not fish or meat. Also I am doing Weightwatchers so trying to do somethng thats low in fat. Ad we are skint so it has to be cheap!
I usually do veggie filo parcels but I've done them for these friends before. I don't realy want to use veggie stuff like quorn or tofu or soya mince as some people don't like them, and I really don't want to do veggie lasagne!!
So any ideas ? I am a mediocre cook, will try anything and would like it to look semi formal.

Have you tried the weightwatchers website? They have recipes on there, lots of which are veggie friendly, and lots of which don't seem particularly diet-y!Its https://www.weightwatchers.co.uk.

Have you tried the lentil mousakka from Delia - the recipe is on her website. I make it without the eggs and cheese cos I am vegan and just replace her topping with a white sauce with added nutmeg. This is one of my favourite Delia dishes. It's hard to describe how scrumptious this is. Some traditional side dishes and follow with kulfi and it's a feast fit for a king!May all your dots fall silently to the ground.0 -
Sorry to butt in, but please could you let me know how you make the filo parcels. I'd like to make some for my mum - aging vegan and can't stand up for ages to make nice things in the kitchen.

How about a veggie bolognaise, with garlic breads and plenty of salads? I know it sounds boring, but present it nicely and it'll be grand.
Or you could try stuffing peppers with a mixture of rice, tomatos, onions etc. Delicious and pretty cheap.Wannabee champagne girl...on a beer income.0 -
How about a broccoli and pumpkin risotto, accompanied by a watercress, tomato and mozzarella cheese salad and a nice apple crumble to finish. Fast, easy and all the recipes can be adapted to low fat requirements.

The veggie message board on Weightwatchers is really helpful and friendly. They've got a recipe swap which you can ask about which has loads of brill ideas.
