What sort of thing do you mean - quiche, for instance, or pasta bake?

i was thinking of something i could bake ahead and cut into squares to freeze ie corned beef pie, (but didnt get that today as it was well over a pound) ive loads of veg so homefully vegtable based), and my 2 pretty easy to feed, but they must be sick of sandwiches lately x

  • You could make savoury oat bars. They're a snack rather than a meal but they're good instead of sandwiches and very yummy. Recipe here.

i do frittata in a non-stick baking tray for picnic's...i cook most things in a rectangle tin as its easier to slice for lunch boxes, leek and potato pie is a favourite in this house, but i often just use what ever's left veg wise, its just quiche with a pastry top, the eggs stop the filling ending up everywhere

got thrifty cookbook out of library and made pot, onion and sausage fritata, so once that cools ill cut into squares and try that with them tom, i made cheese and onion pasties and veg fritata. so hopefully more than enough to keep thier lunchboxes going next week.

Do you make the pie by cooking the leek and mash then mashing then spreading in tin and topping with pastry?
ill try that next week then x

Sound very yummy. How long will these keep for? Do you keep them in the fridge or freeze them?
