I have a large sack of spuds, loads of onions and a load of bacon. I was thinking of cooking a large batch of something or other and freezing it.
Any ideas/recipes?

You could probably follow a potatoes dauphinoise recipe and add bacon in the onion layer, would end up fairly similar. My mother used to make this all the time, although with single cream instead of milk. I don't have it now due to dairy intolerance, but it was delicious! :drool:0 -
Fried potatoes, They eat this in germany.
Parboil potatoes, saute onions in a frying pan add potatoes, season with Buillion Powder and salt and pepper, then add cooked diced bacon.
This can taste salty so I always serve with lots of fresh veg

Boulangere potatoes, a healthy version of dauphinoise potatoes:
layer 2lb potatoes and 1/2-1lb onions(depends on your opinion of onions) thinly sliced in a greased baking dish and cover with 400ml chicken stock (or half milk to make it creamier) and 3 cloves garlic. Bake at 180c covered for 45 mins, then uncovered for 15-30. You could slice it in portions to freeze and take out when in need of a side dish
And I'm sure it'd be nice with crispy diced bacon on top.Living cheap in central London :rotfl:0 -

last time i tried this my taties were abit hard and my sauce was really watery, i had to microwave each portion just to make it eatibale even tho i cooked it for an hr i have no idea where i went wrong

How about making tasty little patties with mashed spuds, finely chopped onion and bacon. You can then take them out the freezer one by one to add to other meals and make it stretch even further.
