for the quick meals, it could be worth you researching the 'cook once, eat twice' approach (it goes by many names, e.g. economy gastronomy called it tumbledown meals'
say for example you're cooking mince. do a big batch. one part becomes a spag bol, another part of it can be jazzed up to form a shepherds pie for later in the week (or to go in the freezer for another time).
