Grocery challenge/Losing weight/Easy recipes?

Hi all, I'm looking to really cut my grocery bill this month, but I want to make sure that the meals I make as actually fairly easy and healthy too. I know there are plenty of threads of cheap meal ideas, but only some of them are healthy. Anyway know if there is a thread that specifically aimed at cheap, easy and healthy recipe ideas?

    Thanks, although not sure if that recipe sounds very healthy with cheese, plus the thread seems a bit focused on that particular recipe. Any others?

    We'll have to agree to differ on our definition of "healthy" then :)

    What's wrong with cheese? We eat it as part of a balanced diet.

    True, but I guess its looked very carb/fat orientated meal. Not that I'm low carbing, but white potatoes aren't the best veg (high GI) and also, while good fats are great (olive oil), cheese is quite high in saturated fat (and very high in calories). Anyway, I did find these but I'm not sure how cheap and easy they are.

    I've thought of maybe an idea around this, how about going for cheap and easy dinners which is pretty much what we do. But then have fruit for puddings and salads on the side.
  • veg and lentil soup, cheap, healthy and filling - you can't beat it, especially in this weather :D
