recipes for beetroot please

I grew beetroot this year in a container and have just picked it - got about 8 beets and wondering whether anyone has a favourite or yummy way to cook it? I'd also be interested in any pickling/preserving suggestions.
i remember my mum used to cook beetroot [not sure what she made think I've blanked that out] and it smelt mega minging so I've always been put off trying it until now though I do like beetroot.
