I haven't tried this myself but am about to - have bought some celery for this purpose arriving in my Tesco's order today! So was looking this up last night.

cream of celery soup is DELISH !
fry onion + celery in butter, add potatoes, then stock cube, water and milk and simmer.blend.

I got the covent garden soup cook book for xmas and theres a lovely celery and cashew one in there, you just use 2 heads of celery around 4oz (i think) of cashews, an onion and some veg stock (I tried making my own but tbh stock cubes are nicer - if saltier and less healthy!) I also added some milk as I felt it needed to be a bit creamier. Method: gently fry onion and chopped celery till onion is transparent but not brown, whizz up cashews till finely ground and add them to the pan with the stock and some seasoning and milk then cook till celery is soft, liquidise in food processor.

Simple celery and rice soup
Wash and strip stalks of their strings, dice and gently braise in some olive oil and a little water until tender. In another pan fry a chopped onion in butter and saute until golden. Add half the celerey saute then add a handful of arborio rice, stir then add 450ml stock - best stock cubes you can afford. Puree remaining celery and add to pan. Simmer until rice is tender but firm tothe bite. Served with chopped parsley and parmesan.NSD 0/150 -

Tried this one, and it was delicious! Used one head of celery and just under half a pint of milk. It's made two generous portions or 3 slightly smaller portions. Just had half of it for lunch - yum.0 -

I make this soup, divide it into pots and freeze them. I take it out the evening before I eat it for lunch. It's yummy!0 -
Does anyone have a tried and tested recipe for celery soup? I have a load that I got in veg box, lovely and green with loads of leaves so would like to make a big batch of soup that I can eat during the week (OH cannot stand the stuff-will eat in stews etc but hates the taste)
All the ones I can find seem to have cream or milk in them. I am looking for a clear, broth style one? Is it simply a case of softening onion, then adding celery and stock/water (am thinking water so really get the celery taste?) may stick some barley or lentils in there too. Please help-I'm HUNGRY thinking about it0 -

I'm not mad about celery but I do love celery soup. I like cream in in it but if you want a clearer soup just replace the cream or milk in the recipes with stock...I think it would need something more than water.

I don't have a recipe for this either, but look forward to reading any that come up. Love celery soup but not keen on creamy soups.
I'm thinking that pearl barley (or rice) would be good in it and seasoned with celery salt and white pepper perhaps. Maybe veg or chicken stock.
My OH is like yours, will eat it in stew etc - but won't tolerate it raw or as a veg - don't know what they're missing.0
