Hi, my mum used to cook a scrummy loaf shaped main course which as I remember consisted of breadcrumbs (stale), eggs, mushrooms (and other leftover cooked veg e.g. carrots) cheese (plus herbs if she was feeling adventurous.
After she died I realised that I didn't have the recipe and have
a. scoured by cookbooks (lots) without success
b. trawled the web searching for a recipe without finding one that matches
c. had a few attempts at makine this (don't even want to go there).
Just wondered if anyone knows what on earth I am on about as I would love to make this (she always made a double quantity and froze one as well, so 2 meals for the same work and time in the oven!)

Hi Soupdragon
The only thing I can think of which is similar is a bread and butter pudding with savoury ingredients. You could try adapting recipes for that by using breadcrumbs in place of the bread slices, adding your cooked veg, and cook in a loaf tin. Or if you remember it being a more solid dish i.e. served in slices, how about adapting a bread pudding recipe? Like this one: http://www.bbcgoodfood.com/recipes/1099635/bread-pudding Just leave out the sugar, replacing the fruit with the cheese and veggies, the spice with herbs, and just soak the bread you already have in crumbs rather than having to tear it up.
Good luck with your experiments/searching :cool:Love and compassion to all x0 -
its sort of a vegetarian 'meat' loaf isn't it? I'll keep my eyes open for a recipe... don't throw the string away. You always need string!

Actually made up a recipe at the weekend to try this out. Going to have to adapt it a bit, as it was a bit wetter than I remember, but DH and DD said it was tasty so will give it a go again. Also a way of using up old bread, ends of cheese etc.
I do remember my mother allowing the ingredients to sit for a while in the bowl before she put it in the loaf tin to bake which I didn't have time to do. Was quick and easy using the food processor to chop up all the ingredients though so will definitely persevere.
Will continue to experiment and let you know how it goes.0 -
I made something similar back in the summer and it was delicious. BUT I cannot find the recipe again anywhere (it was in a tiny leaflet style cookbook) and I have had the place upside down looking for it.
I seem to remember it used lots of wholemeal breadcrumbs and you had to chop the mushrooms up into tiny pieces. It was also a really unfortunate grey colour when cookedbut so, so tasty. Hope someone comes up with a recipe soon
