I always use a pot of ground ginger, and it always comes out lovely!!!! (I normally use more than a bulb of garlic too!!)0

Followed the recipe for a basic chicken curry, then added a slightly out of date tin of coconut cream, some slightly out of date fish sauce and a bit of sugar to Thai it up a little. Very very nice, as good a curry as I've ever had - really enjoyed it! I'm sitting here comtemplating another plateful, but its probably a bit late for seconds.
