Meatloaf queries - slowcooker?

Ive never cooked meatloaf so hoping someone can advise on a few things.

Firstly it says to cook slowly in the oven in a waterbath but wondered if the slowcooker would be a simpler way to do this. I have a low and high setting on mine, what do you suggest.

Im a bit worried as its something you really dont know if its cooked correctly until you take it out to serve.

Also im on a diet currently and the recipe calls for bacon across the top but I felt this was maybe a bit excessive especially as its the only thing I would need to specially purchase. Could I do without it?

    I'm sure I have cooked meatloaf in the SC in the past. I think I wrapped the loaf tightly in foil and put a couple of cm of water in the SC dish. No idea how long I cooked it for or what setting, sorry!

    I would imagine the bacon is to stop the meatloaf drying out in the oven, that wouldn't be a prob in a SC so I wouldn't bother with the bacon.

    Week 10,total weightloss is now 13.5lbs Week 11 STSweek 14(I think)..-2, total loss now 1 stone exactly
    GOT TO TARGET..1/2lb under now weigh 10st 6.5(lost 1st 3.5lbs)
